Founded by Erez Nahum in 2021, DS Hospitality began with Shaffa in Surry Hills: a bold, vibrant expression of the Levant inspired by Erez’s childhood exploring its bustling markets, aromatic laneways and street food.

At its heart is a striking open kitchen and sunlit atrium, bringing guests close to the energy, warmth and theatre of the dining experience.

In 2025, the group expanded to Paddington with CANESS, a neighbourhood tapas bar reimagining Spanish-style small plates through Middle Eastern and Mediterranean flavours, paired with a wine list built around accessibility and character. Since opening, CANESS has carved out its own place in Paddington’s dining scene, becoming a much-loved local spot.

Our latest expedition, Lemala, arrives this summer above CANESS. Intimate and understated, it brings together refined tapas, elevated cocktails and rare wines in a soulful space shaped around conversation, discovery and unhurried enjoyment
